This amazing chicken fajita, you can whip this up for your iftar or dinner, a very easy and quick recipe and the good thing about this recipe is you can serve it with many kinds of sauces and salsas. You can also add more ingredients whatever you like, with different toppings. To enhance the flavor of chicken you can grill the chicken as well.
Chicken fajita will give you an amazing taste with vegan sour cream but you can also use regular sour cream and Yoghurt too.
INGREDIENTS
Marinade
· 2 tablespoons lemon juice
· 3 teaspoon ground cumin
· 2 teaspoon garlic powder
· ½ tsp paprika
· 2 teaspoon onion powder
· hot sauce
· 1 tsp Salt
· ½ tsp Freshly ground black pepper
Fajitas
· 3 - 4 tbsps olive oil
· 2 chicken breasts, sliced thin
· 1 medium onion, cut into 8 pieces
· 1 green bell pepper, sliced
· 1 red bell pepper, sliced
· 1 yellow bell pepper
· 8 pitas (or lettuce for paleo)
· salsa, to serve
· sour cream, to serve
Direction
1. Put the marinade ingredients into a large bowl and add the sliced chicken pieces. Mix it all together to make sure the chicken is fully coated in the mixture.
2. Put in the fridge for 30 mins - 1hr
3. Heat a pan with half the oil and add the chicken, cook for at least ten minutes, stirring frequently until chicken is fully cooked through.
4. Remove chicken to a plate, now add a little more oil and cook up the onions and bell peppers.
5. While the vegetables are cooking you can warm or toast the pitas.
6. Once the veggies are cooked add the chicken back to the pan and warm it all through
7. Serve immediately with the peta bread or tortillas and any combination of salsa, sour cream, vegan sour cream and shredded cheese.
