India, Pakistan and Bangladesh have very hot traditional dishes to celebrate Eid-ul-Fitr, a three-day holiday at the end of Ramadan. Meethi Eid is incomplete without traditional delicacies like kheer, sheer khurma and sawaiyan.
Here is one of the Pakistani traditional recipes for kheer, made with carrot, sugar, milk, rice, dry fruits & saffron. It’s very simple and quick recipe to make on Eid day. Carrot kheer is also rich source of vitamins, minerals, protein and calcium. You can use it for both sweet and savory.
INGREDIENT
· Carrot 3 big peeled, washed, grated
· Rice flour ½ cups
· Full cream milk 11/2 liter
· Sugar 1 cup
· Green cardamom 2-4
· Crushed nuts 3-4 tbsp
· Butter 2 tbsp
· Powder milk 4-5 tbsp
DIRECTION
1. Boil milk in a pan with cardamom powder and then add carrots and rice flour in it.
2. Cook on medium flame until carrots are cooked. It will take approx 20- 30 minutes. Stir at intervals.
3. Then add sugar, nuts and milk powder in it.
4. Cook for few more minutes. When it thickens slightly, turn the flame off.
5. Decorate it with crushed nuts, and serve chill!
