Warm up your Christmas with this carrot cake recipe
The festive Christmas season is finally here and for those celebrating this cold weather festivity, here is a warming and delicious staple Christmas dessert that will tantalize your taste buds with mouth watering goodness.
Carrots are the best seasonal vegetable that can yield a variety of delicious dishes, including both savory and sweet delights. For this Christmas, instead of going the same traditional way, try this easy, delicious and tempting Christmas carrot cake .
Here is what you'll need:
1 cup of flavorless oil (sunflower or canola oil)
4 eggs
1 cup sugar (1 and ½ cup of processed fine sugar)
1 tsp of vanilla extract
2 cups of all purpose flour
2 tsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp ground cinnamon (optional)
2 cup loosely packed, finely grated carrot
¾ cup lightly toasted walnuts or raisins (optional)
Directions:
In a bowl, mix together all your wet ingredients by mixing oil, eggs, sugar and vanilla extract. Do the same with dry ingredients by sifting the flour with baking soda, powder, salt and cinnamon in another bowl.
Then add half of the dry mixture in the wet mixture and mix until thoroughly combined. Then combine the other half and mix adding the carrots and walnuts. Pour the mixture in two greased 9 inch baking pans and put the trays in the oven on 180 C or 350 F for about 25-30 minutes depending on the oven settings.
Ingredients for cream cheese icing for cake:
1 pack (225 g) brick cream cheese at room temperature
¼ cup unsalted butter at room temperature
3 cup icing sugar, sifted
1 tsp vanilla extract
1 tsp lemon juice
Method:
Whisk the icing ingredients until combined and frost the cake with the icing once the cake has cooled.
