INGREDIENTS: 4 potatoes, peeled and cubed, then fried until tender and drained. 250 gms mutton liver, cleaned and washed, then cut into cubes. One onion, chopped. 1/2 tsp red chilli powder 1/2 tsp turmeric powder 1/2 tsp black peppers, roughly ground 1/2 tsp cumin powder 1/2 tsp red chilli flakes some freshly chopped coriander leaves 4 tbsp oil 1 tsp ginger and garlic paste 1 tsp lemon juice 2 green chillies, chopped Salt to taste.
Method: Heat oil in a pan, fry onions until translucent. Add liver with ginger/garlic paste. Add all the spices along with lemon juice, green chillies and salt/pepper. Cook until the liver changes colour and is about done. Add the fried potatoes and stir together so the potatoes get well coated with the onion masala. After five minutes remove from the stove and garnish with green coriander.
Gola Kebabs Ingredients: 1/2 kg mutton mince 1/4 cup bhuna chana, 1 tsp of all spices 1 tsp salt 1/4 cup curd 1 large raw onion, ground 2 tsp levelled ginger/garlic.
To grind: 1 tbsp papaya 1 tbsp poppy seeds 1 tbsp saunf 1 tbsp coriander seeds 1 tbsp coconut 4 red chilli
Method: Roast all the ingredients to be ground and grind to a fine paste with chana. Marinate mince with papaya, salt, ginger/garlic and all the roasted and ground masala. Leave for an hour or two. Mix well and refrigerate. Mix in curd. Make balls and fry in a little oil. Let it cook on a slow fire.Garnish with chopped green chilli, coriander leaves. Remove on a serving dish.
Shami Kebabs Ingredients: 1/4 kg mince meat. 1/2 cup channa dal.4 red chillies. 1 tbsp dhania seeds 1 tsp poppy seeds 6 cloves garlic 1-inch ginger 1 stick cinnamon 4 cloves 6 peppercorns 4 cardamom 1/4 tsp haldi powder 1 onion chopped 2 tbsp dhania leaves chopped Salt to taste Ghee for frying 1 egg 1 onion chopped 2 tbsp coriander.
Method: Boil all the ingredients together in 3 cups of water and cook till water dries up. Then grind finely. To the ground meat, mix the egg and coriander leaves. Form into medium sized balls, flatten and fry in little ghee
Afghani Kebabs Ingredients: Minced beef 1 kg Green chillies 10 (cut very fine) Onions 2 (medium size, chop as for omelets) Coriander leaves 1/2 bunch Black pepper 1/2 tsp (grind coarsely) Tomatoes 1 kg (boil & make paste) Salt to taste Cooking oil 1 cup
Method: In a bowl combine mincemeat, green chillies, black pepper, onions and knead them, separate into four portions. Brush each portion with a little oil. In a flat frying pan flatten and place one portion and cook for 4 minutes. Repeat with the other portions then cut each int strips. In a wok (karhai) fry the pieces slightly, add tomatoes, salt and a few green chillies and black pepper. Cook until oil separates, garnish with coriander leaves.
