The festival of Eid-ul-Azha is the remembrance of sacrifice and spirit of Prophet Ibrahim and his beloved son prophet Ismail (A.S). Eid-ul-Azha is reminder of Prophet Ibrahim's willingness to obey God when he dreamed that he was to sacrifice his son. "Surely Ibrahim was an example, obedient to Allah, by nature upright, and he was not of the polytheists.-- We gave him good in this world, and in the next he will most surely be among the righteous." (Qur'an)
Muslims all over the world celebrate Eid-ul-Azha with great zeal and zest. One-third from the sacrificed animal of Eid-ul-Azha is donated to the poor, and one-third is given away to friends while immediate family and relatives eat One-third meat. Cooking and serving exotic meat dishes is an integral part of the Eid-ul-Azha celebrations. The occasion of Eid-ul-Azha is incomplete without the famous and known dishes, which every family cook on the Eid day. A number of mouth-watering dishes prepared in every home on Eid days like kebabs, biryani, stew, Qorma Nihari and many more. However, dishes made from liver immediately on the first day of the slaughter are the most sought after Eid delicacies.
Liver is highly nutritious and the most popular of all organ meats (kidney, brain, lungs and heart). It is a storage organ for vitamins, minerals, proteins and fats. Liver stores minerals such as Iron, Zinc, selenium, Copper and Manganese and Vitamins B2, B3 and B9. Beef liver is particularly rich in the nutrients that help keep our brains healthy. Selenium is a trace mineral involved in the production of key enzymes, particularly ones related to thyroid function. Zinc is also necessary for good immune function. Liver is good source of vitamin B12, essential to prevent nervous system disorders and prevention of colon cancer. Vitamin B12 also enhances the production of blood and energy. Its deficiency can cause difficulties in thinking and remembering, panic attacks, weakness, loss of balance, numbness in the hands and feet, or agitated depression. Liver contains many nitrogen-containing compounds that are building blocks for DNA and RNA. In combination with the B vitamins, this makes it extremely helpful to people with Alzheimer's or other types of dementia.
Liver is the number one choice for those who build muscles as 100g of liver provides 26.5g of pure protein. It helps to increasing endurance and strength in athletes.
Liver is an excellent source of Vitamin A, which ensures good skin health and fine vision. Liver packed with high concentration of nutrients, which helps to meet the daily requirement and ensure proper functioning of various bodily systems. The iron substance in the liver is most functional by the body than from any other available source However; high intake of liver should be avoided.
According to the USDA, a 68-g slice of beef liver contains 1.2 g of saturated fat and 0.8 g of unsaturated fat. Saturated fat is not good for health and can cause impairment of the blood vessels and heart. Over eating meat impairs the heart's ability to do its job. It also contains approximately 270 mg of cholesterol per serving. According to Mayo Clinic, organ meats like liver are among the most concentrated sources of dietary cholesterol. If you have high blood cholesterol levels, you should not eat more than 300 mg of dietary cholesterol a day.
Liver has vitamin B3 that can lift up the Blood Glucose Level. High intake of B3 can be a cause of side effects like eczema, dry skin and skin flushing etc. Therefore, if you consume 100g of liver, try to avoid other foods, which are rich in this substance like different meats, carrots, broccoli, nuts, etc.
Tips for cooking Liver: Take liver freshly cut, without washing and take whole garlic and crush, with the skin on. Apply the garlic all over the liver and leave in a strainer for 20 minutes. Then rinse with cold water in the strainer and leave for further 20 minutes. All smell from liver and kidney will disappear. When cooked too long, liver turned hard, chewy and exert a strong liver taste.
